Cilantro Lime Rice
A healthy energy-fueling carb with tons of flavor and nutrients all comes together in this amazing Cilantro Lime Rice recipe!
- 1 tbsp coconut oil
- ⅓ cup yellow onion
- 1 cup long grain white rice
- ½ tsp garlic powder
- 2 cup s chicken broth
- 2 tbsp lime juice
- ¾ cup cilantro
- 1 tspcup lime zest
- salt and pepper
Heat coconut oil in a large pot on medium-high heat.
Add onion and cook for about three minutes, stirring occasionally to prevent burning.
Add in rice and garlic powder, stir together ingredients and let cook for about two minutes just to toast the rice slightly.
Pour chicken broth and lime juice to the pot and stir to combine.
Bring mixture to a boil, reduce heat to simmer, cover and cook for about 20 minutes.
When rice is completely cooked add lime zest, cilantro, and season well with salt and pepper.
